One Windows machine is the outlet’s hub: it takes orders, prints KOTs and bills, and owns every transaction. Captains and terminals talk to it, not the internet.

The internet goes down. Dinner service does not.
Most cloud POS systems freeze the moment the line drops, right in the middle of a rush. ZaikaLab is built the other way around: the outlet works on its own, and the cloud is a copy that catches up later, never a dependency in the path of a sale.
